 What Is Soft Set Honey – And Why Do People Like It?

If you’ve ever wondered what gives soft set honey its irresistible texture and unique flavours

It’s the same natural honey as set, just gently controlled during the crystallisation process to create a finer, smoother texture.

Soft set honey is thicker, smoother, and holds its shape.

It doesn’t flow in the same way — it spreads.

The Science

Honey is a natural super-saturated sugar solution, which means it will naturally crystallise over time. This is completely normal and happens in most raw honeys.

The texture depends mainly on the natural balance of sugars — especially glucose and fructose — as well as storage temperature.

  • Glucose encourages crystallisation

  • Fructose stays more liquid


The rate at which honey crystallises depends mainly on its natural sugar composition, particularly the balance between glucose and fructose, as well as its moisture content.

Honey with higher levels of glucose tends to crystallise more quickly, while higher fructose levels help keep it liquid for longer.

Other natural factors, such as tiny particles of pollen and wax within raw honey, can also influence how crystals form by providing points for crystallisation to begin. This is why raw honey may crystallise more readily than highly filtered honey.

As crystallisation occurs, honey can set in different ways. Sometimes it becomes evenly smooth throughout the jar. Other times, it may separate slightly depending on how the sugars settle.

With soft set honey, this natural process is carefully controlled. The honey is gently stirred or “seeded” to encourage fine, even crystals.
