Soft Set Honey from the Lincolnshire Wolds

Our hives are situated around Louth and the Lincolnshire Wolds, where the bees forage across the changing countryside through the seasons.

For this soft set honey, the spring forage includes oilseed rape, early flowering hedgerows and spring blossom. What the bees collect naturally influences the flavour, colour and character of each harvest.

That's part of what makes real local honey so interesting — every harvest tells a slightly different story about the season and the landscape around the hives.

How does honey become soft set?

Soft set honey is sometimes called creamed honey. It isn't a different type of honey; it is honey that has been carefully controlled during its natural crystallisation.. As honey crystallises, tiny sugar crystals form. By controlling this process, we can encourage the formation of very fine crystals, creating the smooth, creamy texture associated with soft set honey.

The result is honey that is:

• Easy to spread on toast and crumpets

• Smooth rather than coarse or grainy

• Delicious stirred into porridge or yoghurt

• Lovely in tea and other drinks

• Ideal for baking and cooking

From our hives to your jar

At Stax Of Wax, it always starts at the hives.

Our honey is produced from our own family hives around Louth and the Lincolnshire Wolds and harvested in seasonal batches according to what our bees have collected and when each crop is ready.

The honey is extracted while warm where appropriate, then lightly strained and handled carefully before being prepared for you.

We don't blend our honey with imported honey or buy in supermarket honey.

Raw Lincolnshire honey

Our honey is raw and unpasteurised. It is lightly strained to remove unwanted debris while retaining the natural character of the honey.

There are no added ingredients.

Because honey is a natural product, the colour, flavour and texture can vary between harvests. That's something we embrace rather than try to make identical from jar to jar.

Where is your soft set honey produced?

Our honey is produced in Lincolnshire from our own family-owned beehives around Louth and the Lincolnshire Wolds. 

The honey is extracted and handled in a registered food production environment, which has a 5-star food hygiene rating, supporting careful handling, traceability and food safety throughout the process.

Store at room temperature and keep the jar closed when not in use.
