There's something truly special about cut comb honey.
Unlike runny or soft set honey, cut comb is presented exactly as the bees created it. Every hexagonal cell has been carefully built from natural beeswax, filled with honey
gathered from the surrounding countryside, and sealed by the bees themselves.
For just a short time each year, we're able to harvest a limited number of cut comb boxes from our hives around Louth, the Lincolnshire Wolds and the surrounding countryside. It's one of the purest ways to enjoy honey – untouched, unprocessed and exactly as nature intended.

From Wax to Honey
Many people are surprised to learn that bees produce the wax themselves.
Worker bees secrete tiny flakes of beeswax, from there abdomen. Carefully moulding them into the familiar hexagonal honeycomb that has fascinated people for centuries. These perfectly shaped cells are then used to store nectar collected from thousands of flowers.
Back at the hive, the nectar is passed between bees, gradually reducing its moisture content before being placed into the comb. Once the honey has fully ripened, the bees seal each cell with a delicate wax cap, preserving it until it's needed.

Every season tells a different story.
As spring gives way to summer, the forage available to our bees changes naturally. Earlier nectar sources make way for wildflowers, bramble, clover, hedgerows and patches of bee-friendly flowers such as phacelia, all contributing to the character of our summer harvest.
Because honey reflects the flowers visited by the bees, no two harvests are ever exactly the same. Subtle differences in weather, flowering plants and the season itself all influence the flavour, making every year's cut comb harvest unique.

Harvested with Care
Harvesting cut comb requires patience and a gentle touch.
Unlike runny honey, which is extracted from the comb before being filtered and jarred, cut comb remains exactly as the bees built it. Each section is carefully selected by hand before being cut, checked and placed into its presentation box with as little handling as possible.
The result is honey exactly as it came from the hive, complete with its natural edible beeswax comb.
Because only a small number of suitable frames are produced each season, cut comb honey is always available in limited quantities.
What Does Cut Comb Honey Taste Like?
Cut comb offers a completely different experience from spooning honey out of a jar.

We're often asked why cut comb sells out so quickly.
The answer is simple: our bees come first.
Producing beautiful sections of comb takes a great deal of effort from the colony, and we only harvest what the bees can comfortably spare. Every season is different, depending on the weather, nectar flow and the strength of each colony, so the number of boxes available changes from year to year.
For us, good beekeeping has always been about working with the bees rather than taking more than nature provides.

Absolutely. The delicate beeswax casing built by our local bees is entirely natural, safe, and perfectly edible. The beeswax its self is chewy, this is more notice able when eaten on its own.

Kept away from direct sunlight, raw honeycomb will stay fresh and delicious indefinitely.
Does cut comb honey crystallise?
Yes, because our Lincolnshire Wolds honey is 100% raw and unpasteurised, it will eventually crystallise over time. This is a completely natural process that proves the honey is pure and untouched. However, because the honey is sealed inside its original airtight wax cells by the bees, cut comb actually crystallises much slower than standard jarred liquid honey, keeping its smooth texture for longer.
